At Scratch, we are not just up for the challenge – we live for the challenge. To begin with, we are Dayton’s only Molecular Gastronomy source, providing cutting-edge edibles produced with techniques like spherification, gelification, and encapsulation. Of course we are also old pros in the use of liquid nitrogen, executing outrageous exhibitions of on-site ice cream preparation. We also love to create menus around themes, time periods, regions, countries, family history, etc… any little kernel of information we can get our hands on to run with – we will. As you can see by our menus, there are lots of influences in our food and we love it that way. So the real question is – are you going throw up the next challenge for us? WE HOPE SO!
